Here is a modified chocolate (IE), my favorite version of butter icing:
8 cups powdered sugar
1 cup butter, softened
6.7 tablespoons milk (add a tablespoon of extra, if too thick)
~ 1 / 2 cup cocoa powder (or 2 ounces unsweetened chocolate, melted cooled)
Mix all ingredients except milk in small bowl. Beat at low speed, scraping bowl often, and add enough milk for desired spreading consistency (1 to 2 minutes).
Makes 2 cups.
